
Aloo Palak ki Sabzi (Potatoes and Spinach Curry)
Aloo Palak ki sabzi or potato and spinach curry is a vegan Indian recipe in which potatoes and spinach are cooked together. Hence, it’s healthy and really simple to cook. You can have it with Chapati or Parantha. My version consists of thick gravy so you can have it along with rice too.
If you don’t like potatoes too much as it’s not diabetic friendly, you can reduce their quantity or replace them with boiled eggs. But, in that case, you put eggs at the end when all ingredients of aloo palak are completely cooked.
Ingredients Required for Making Aloo Palak
- Oil – 2 tablespoons + 2 tablespoons extra for frying
- Potatoes – 2 medium-sized diced
- Onion – 1 large-sized diced
- Tomato – 2 nos
- Salt – to taste
- Turmeric powder – 1 teaspoon
- Coriander powder – 2 teaspoon
- Red chilli powder – 1/2 teaspoon
- Spinach – 250 gm roughly chopped
- Garam masala – 1/2 teaspoon
How to make Aloo Palak ki Sabzi?
- Heat 4 tablespoons of oil in a pan. Add potatoes and shallow fry them till light brown. Don’t overcook else it may become mushy.
- After the potatoes are done. Leave 2 tablespoons of oil in the pan and remove excess. In it, add onion and cook till it becomes golden brown.
- Once onions are cooked, add tomatoes.
- Add salt, turmeric powder, coriander powder and red chilli powder into it and mix well. Close the lid and cook this mixture for 5 minutes or till the gravy starts releasing oil.
- Add spinach, close the lid and cook for 2-3 minutes on low to medium heat.
- Now add fried potatoes and garam masala, mix well, close the lid and cook for a minute on low flame.
- Aloo palak is ready. Serve hot.
Tips
- Don’t add too much water into the curry as spinach releases water while cooking.
