
Mix Vegetable with Mushroom in Butter Garlic Sauce
In Indian cooking, we use to make mushroom mix vegetable or mixed vegetables recipe, especially during winters. Because winter season brings vegetables of different tastes and colours like carrot, green peas, cabbage, bell peppers, etc. These vegetables are easy to convert in any experimental dish. Be it a soup, main course, salad or snacks. You may chop these finely and stuff them into samosas, puff pastries, add them into pasta, noodles, or bake it or add to the gravy. I mean anything you can do with these all-time favourites.

I combined two recipes into one and here is an exclusive Indian version of Butter Garlic Mushrooms Vegetable Mix. One day I was left with carrots, mushroom, green peas and tomatoes, so I decided to invent this recipe because I know how divine is the flavour of butter garlic mushrooms.

Things required for Making Mix Vegetable with Mushroom
- Mushroom – 250 gm
- Carrot – 2 nos
- Green Peas – 1 cup
- Garlic – 3 cloves, chopped
- Black pepper powder – 1/4 teaspoon
- Salt – to taste
- Oil – 3 tablespoons
- Butter – 50 gm
- Onion – 1 medium, sliced
- Ginger – 1 inch, grated
- Green chilli – 1 nos, chopped
- Tomatoes – 2 nos, chopped
- Turmeric powder – 1 teaspoon
- Coriander powder – 2 teaspoons
- Red chilli powder – 1/2 teaspoon
- Garam masala – 1/2 teaspoon
- Dried parsley – 1 tablespoon
How to make Mushroom Mix Vegetable?
- Heat 2 tablespoons of oil in a pan. Add butter to it. Keep the flame low so the butter won’t burn.
- Once the butter is completely melted, add chopped garlic to it. Wait till garlic turns golden brown.
- Add mushrooms, salt and black pepper powder. Cook till mushrooms? water vaporises completely and it starts separating oil.
- Keep mushrooms aside in a bowl.
- In leftover oil of fried mushroom (because it contains garlic flavour), add another 1 tablespoon of oil.
- Add the sliced onion to this oil and cook till golden brown. Once the onion is cooked, add grated ginger and green chilli.
- Add tomatoes, carrots and green peas along with salt, turmeric powder, coriander powder, red chilli powder and garam masala. Mix well.
- Add a little water just to make steam inside. Close the lid of the pan and cook on medium heat for 10 minutes.
- Open the lid. Add fried mushrooms and dried parsley, mix well and again close the lid for 5 minutes on medium heat.
- The mushroom mix vegetable is ready to serve. Have it with roti, paratha or any of your favourite bread.

Butter Garlic Mushroom Veg Mix
Ingredients
- 250 gm Mushroom
- 2 Carrots
- 1 cup Green Peas
- 3 cloves Garlic chopped
- 1/4 tsp Black pepper powder
- Salt – to taste
- 3 tbsp Oil
- 50 gm Butter
- 1 Onion sliced
- 1 inch Ginger grated
- 1 Green chilli chopped
- 2 Tomatoes chopped
- 1 tsp Turmeric powder
- 2 tsp Coriander powder
- 1/2 tsp Red chilli powder
- 1/2 tsp Garam masala
- 1 tbsp Dried parsley
Instructions

- You may also add following vegetables in this recipe – Baby corn, bell peppers, cabbage, spring onions and zucchini.
