(Potato Masala) Recipe of Masala Aloo

Potatoes are an easily available vegetable all around the world and it’s an ingredient that can be added to any recipe or can be used to invent a new one. But this recipe of Potato Masala is a delicious recipe, which is made by coating the potatoes in various spices for giving it a nice texture and flavour and you can have it with poori or chapati whatever you like. It’s a very common recipe in India.

Required Ingredients for Potato Masala

Potatoes – 3 medium-sized diced

Onion – 1 medium-sized finely chopped

Green chillies – 2 nos finely chopped

Ginger garlic paste – 1 teaspoon

Amchoor Powder – 1/4 teaspoon

Kasuri Methi (Dried fenugreek leaves) – 1 teaspoon

Coriander powder – 1 teaspoon

Turmeric powder – 1/2 teaspoon

Red chilli powder – 1/2 teaspoon

Water – as required

Oil – 2 tablespoons

Salt – to taste

For Potato Masala Spice Mix

Cumin seeds – 1 tablespoon

Mustard seeds – 1/2 tablespoon

Coriander seeds – 1/2 tablespoon

Black peppercorns – 6-7 nos

How to Make Potato Masala?

For preparing spice mix

  • Heat a pan on medium to low flame and dry roast coriander seeds, cumin seeds, black pepper and mustard seeds till it starts realising aroma.
  • Cool it down completely and grind into a spice mix powder.
  • Keep this aside.

For making Aloo Masala

  • Heat oil in a pan. Add potatoes and roast it for 5 minutes till it becomes light golden brown. Keep it aside.
  • In the same pan and oil, add onions and fry till it becomes golden brown.
  • Then add green chillies and ginger-garlic paste.
  • Now, add all dry spices along with a freshly made spice mix. Add a little bit of water to prevent the spices from burning. Cook till masala /spices start realising oil from the corners.
  • Next, add potatoes and cook for 5 minutes.
  • Then add salt and Kasuri methi and further cook for 5 minutes.
  • The recipe of potato masala is ready for serving hot with chapati, poori or parantha.

Frequently Asked Questions

Can we use ground spices instead of whole spices in spice mix for aloo masala?

Yes, the main reason for using whole spices is to add more flavour to the recipe. You can use 1 tsp of cumin powder, 1 tsp of mustard powder, 1 tbsp of coriander powder and 1 tsp of black pepper powder.

How to store Potato Masala?

This recipe can be easily refrigerated for upto 7 days.
