Heat 2 tablespoons of oil in a pan.
Add butter to it. Keep the flame low so the butter won’t burn.Once the butter is completely melted, add chopped garlic to it. Wait till garlic turns golden brown.
Add mushrooms, salt and black pepper powder. Cook till mushrooms' water vaporises completely and it starts separating oil.Keep mushrooms aside in a bowl.
In leftover oil of fried mushroom (because it contains garlic flavour), add another 1 tablespoon of oil.
Add the sliced onion to this oil and cook till golden brown. Once the onion is cooked, add grated ginger and green chilli.
Add tomatoes, carrots and green peas along with salt, turmeric powder, coriander powder, red chilli powder and garam masala. Mix well.
Add a little water just to make steam inside. Close the lid of the pan and cook on medium heat for 10 minutes.Open the lid.
Add fried mushrooms and dried parsley, mix well and again close the lid for 5 minutes on medium heat.
The veg mix is ready to serve. Have it with roti, paratha or any of your favourite bread.
