Butter Garlic Mushroom Veg Mix

Ingredients
  

  • 250 gm Mushroom
  • 2 Carrots
  • 1 cup Green Peas
  • 3 cloves Garlic chopped
  • 1/4 tsp Black pepper powder
  • Salt – to taste
  • 3 tbsp Oil
  • 50 gm Butter
  • 1 Onion sliced
  • 1 inch Ginger grated
  • 1 Green chilli chopped
  • 2 Tomatoes chopped
  • 1 tsp Turmeric powder
  • 2 tsp Coriander powder
  • 1/2 tsp Red chilli powder
  • 1/2 tsp Garam masala
  • 1 tbsp Dried parsley

Instructions
 

  • Heat 2 tablespoons of oil in a pan.
  • Add butter to it. Keep the flame low so the butter won’t burn.Once the butter is completely melted, add chopped garlic to it. Wait till garlic turns golden brown.
  • Add mushrooms, salt and black pepper powder. Cook till mushrooms' water vaporises completely and it starts separating oil.Keep mushrooms aside in a bowl.
  • In leftover oil of fried mushroom (because it contains garlic flavour), add another 1 tablespoon of oil.
  • Add the sliced onion to this oil and cook till golden brown. Once the onion is cooked, add grated ginger and green chilli.
  • Add tomatoes, carrots and green peas along with salt, turmeric powder, coriander powder, red chilli powder and garam masala. Mix well.
  • Add a little water just to make steam inside. Close the lid of the pan and cook on medium heat for 10 minutes.Open the lid.
  • Add fried mushrooms and dried parsley, mix well and again close the lid for 5 minutes on medium heat.
  • The veg mix is ready to serve. Have it with roti, paratha or any of your favourite bread.

Notes

  • You may also add following vegetables in this recipe - Baby corn, bell peppers, cabbage, spring onions and zucchini.
