Masala aloo is a dry spicy recipe made with potatoes and various whole spices by making them into a spice mix.

  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 green chillies
  • 1 tsp ginger-garlic paste
  • 1/4 tsp amchoor powder
  • 1 tsp kasuri methi (dry fenugreek leaves)
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • water (as required)
  • 2 tbsp oil
  • to taste salt

For spice mix

  • 1 tbsp cumin seeds
  • 1/2 tbsp mustard seeds
  • 1/2 tbsp coriander seeds
  • 6-7 nos black peppercorns


For preparing spice mix

  • Heat a pan on medium to low flame and dry roast coriander seeds, cumin seeds, black pepper and mustard seeds till it starts realising aroma.
  • Cool it down completely and grind into a spice mix powder. Keep this aside.

For making Masala Aloo

  • Heat oil in a pan. Next, add potatoes and cook for 5 minutes.
  • Add potatoes and roast it for 5 minutes till it becomes light golden brown. Keep it aside.
  • In the same pan and oil, add onions and fry till it becomes golden brown. Then add green chillies and ginger-garlic paste.
  • Now, add all dry spices along with a freshly made spice mix. Add a little bit of water to prevent the spices from burning.
  • Cook till masala /spices start realising oil from the corners.
  • Then add salt and Kasuri methi and further cook for 5 minutes.
  • Masala aloo is ready. Serve hot with chapati or parantha.
